Natural Cocoa Powder
The cocoa powder in this package is natural, unlike most cocoa powder that is “dutched”. Dutching involves adding alkali solutions such as potassium or sodium carbonate to cocoa. Alkalizing was invented in the 19th century to make cocoa powder less likely to sink in fluids but it also modifies flavour and colour. Our @rainforestalliance certified Natural Cocoa Powder returns to a simpler time of natural flavours and colours. You may experience the flavours as being slightly strong, fruity, or astringent, and for some recipes you may want to add baking soda or other ingredients to compensate.
